Cake Balls

Some of my daughter's friends held a baby shower for her a few weeks ago. The table was amazing and in a martini glass were my favorite - cake balls. I tried to make these a few years ago and rather than beautiful round balls, mine turned out like meteors!  I missed out the step of putting them in the freezer for a short time. (see video from www.Bakerella.com for cake pops.) The recipe is simple:

Directions
1. Prepare a cake mix following the package directions. Bake in a 9 x 13 pan but any size is fine.

2. While still warm, crumble into a large bowl and stir in one tub of frosting. Mix well. If you don't want them to turn out into something that you could only serve with minimal lighting like mine, put them in the fridge or freezer for a while so that the mix is easier to work with.

3. Melt chocolate coating in a glass bowl. (You can either use chocolate bark or the chocolate wafers used specifically for candy making.) You can do this in the microwave or in a double boiler.

4. Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.
That's it.
